This Best Homemade Chicken Soup Recipe is very tasty and healthy to consume from everyone, even from young kids. It can prepare easily and quickly. This is the first plate for our lunch or dinner meals. We will share with you this recipe with pasta soup, but you can prepare it the same way with rising, noodles, or groats.
Ingredients 4-6 Servings
- 1/2 chicken
- 1 onion
- 1 carrot
- Fresh parsley
- 100 g pasta soup
- 50 ml of milk
- 1 lemon (juice)
- Olive oil
- Salt, pepper
Directions
- We wash the chicken well, remove the skin and cut it in pieces. To cook fast we will use a pressure cooker.
- Add the cleaned chicken pieces in the pressure cooker, add the peeled carrot cut in big pieces.
- Add the cleaned onion, 2-3 parsley branches, salt, and we will cover all with water.
- Put the pressure cooker to boil in medium heat for about 20 minutes.
- Let the chicken cool. Remove the chicken from the pressure cooker, clean from bones and keep it apart. With a colander, take the chicken broth and transfer in another deep pan or casserole. We can add a little water if it is necessary.
- Put the chicken broth to boil, and when the broth is boiled we add the pasta soup, to cook for the indicated cooking time.
- Helping by a fork, we make the carrot puree and add it to the soup. Add the chicken meat.
- Once the pasta is cooked properly, season with salt, pepper, and finely chopped fresh parsley.
- In a bowl mix the milk with a little lemon juice and olive oil and add to the soup, after removing it from the heat. Do not add to much lemon juice, everyone one can add other lemon juice in the soup plate as he prefers.
- Serve it immediately.

Note: In the same way you can replace the pasta soup with rice, as we suggest above. For young baby, you can use pasta soup, for the indicated age, and blend the chicken. You can add an egg yolk to the milk and lemon juice, but in this case, you will let the soup to boil for other 2 minutes before removing from heat. You can also use cerely for the broth.
