Eggplant is one of my favourite summer vegetables, and this not only because it is tasty, but at the same time it offers a variety of cooking it. We can cook the eggplant and prepare with it delicious recipes in all ways, baked, stuffed, fried, grilled, steamed, or in a microwave. We will bring you a variety of eggplant recipes, and today we like to share our Best Eggplant Meatballs. They are light and delicate to taste and consume by everyone. We can prepare the eggplant meatballs, big, in a normal meatball size or small to consume like tasty finger food. The Eggplant Meatballs can cook baked at the over or fried, and we like to share with you the baked one, because I cook this recipe for all the family, even for my little daughter, and I prefer for her the baked way of cooking it.
You can choose each of them, because the ingredients and the directions to prepare the recipe are the same, except the fried part.
The eggplant meatballs can cook as a vegetarian or vegan recipe, but the eggplant combine very well with the minced meat, so for the meat lovers, the eggplant meatballs can cook with meat.
We suggest you the vegetarian recipe because it is light and you can enjoy the eggplant taste.
Ingredients
- 500g eggplants
- 100 g grounded cheese, like parmesan type.
- 50-100 g breadcrumbs for the meatballs dought, plus other breadcrumbs for the outside meatballs breading.
- 1 egg
- 2-3 tbsp olive oil
- Salt
- Pepper
- Fresh parsley, basil, or oregano
Directions
- Heat the oven at 200°C/390°F.
- Rinse the eggplants, dry with a kitchen towel, add a little salt and olive oil and wrap with aluminium paper in all, without cutting them. Transfer in a baking dish and put in the preheated oven to bake for 20-25 minute. We use this way for last baking time, but if you don’t want to use it, then you can bake the eggplants in all for about one hour.
- Let the baked eggplants to cool, remove the skin and put the peeled eggplants in a colander to dry from the remaining water.
- In a deep bowl, add the baked eggplants, grounded cheese, breadcrumbs, egg, herbs, olive oil, and mix all the ingredients to make the eggplant meatballs dough. Don’t add to much salt, because the cheese is salty, and if you want to cook for a young toddler, it is better to not add another salt, just the cheese is enough.
- Preheat the oven at 200°C/390°F.
- With your hands, prepare round meatballs, in the size that you prefer.
- Prepare a baking tin with a baking paper or a little oil.
- Breading from outside each eggplant meatballs and transfer to the baking tin.
- Put in the preheated oven and bake for 40-45 minutes, until golden brown. The meatballs will be crochet outside and soft inside. Very tasty to consume warm, but you can also consume them after cooling because they are the same tasty.

If you prefer to fry the eggplant meatballs, take the vegetal oil, corn or sunflower oil, and fry the meatballs in medium heat. Be careful to not burn the oil in high heat. After frying, transfer them in kitchen paper, to eliminate the remaining oil.
