Ingredients
- 8 eggs
- 240 g of sugar
- 240 g of flour
- ground lemon zest
- a little salt
Directions
- Eggs should be at room temperature and fresh. We will open the eggs one by one and throw them in a large glass bowl. Add sugar and a little salt, and beat with an electric hand beater for 10-12 minutes.
- We will see that their volume tripled, and we will see that a light and bleached foam has formed.
- Add the minced lemon zest. Sift the flour and add it to the egg mass piece by piece.
- Mix it carefully from bottom to top with a kitchen spatula.
- We prepare a baking pan greasing it with butter and sprinkled it with flour, or we can use parchment paper at the bottom of it. After all the flour is absorbed, we throw the obtained dough in an open baking cake pan.
- The dimensions of the casserole should be 26 cm and in a circular or square shape. It depends on how you make the cake.
- Bake the sponge cake for 30-35 minutes at 180 degrees in a preheated oven. Do not open the oven door for the first half of the time to not drop the sponge cake volume. It should get light brown. You will see that it detached from the sides of the baking pan, or do the toothpick test to see if it comes out dry.
- Let it cool completely before cut it and use it for the cake we want to prepare with it.
