Today, we want to share with you Baked Meatballs And Potatoes, another delicious meatball recipe to enjoy in our family meals.
In this recipe, we will cook meatballs with minced beef combined with spices. You can also cook them as you prefer, following the same directions as below, or refer to our other meatball recipes to cook them with ground beef, ground pork, ground chicken, or just mixed vegetables.
In this recipe, we first boil potatoes, and after that, we marinate them with salt and spices and bake them together with the meatballs. Preparing potatoes this way is much tasty, getting soft potatoes on the inside and crunchy on the outside. It is a second dish, pleasant to be enjoyed by the whole family, including the children.
Ingredients – 4 Servings
- 3-4 potatoes
- salt, oregano, rosemary, corn oil
For meatball dought
- 300 g ground beef
- 1-onion
- 1-2 garlic cloves
- 1-egg
- 1-zucchini (facultative)
- a slice of bread soaked in milk or water
- salt, pepper, oregano, mint, olive oil
- bread crumbs for breading
Directions
- We will peel the previously washed potatoes from the skin and cut them into medium cubes.
- In a deep saucepan, we will add diced potatoes, water, and a little salt, and we will boil them for about ten minutes.
- Next step, We will prepare the meatball dough. We clean the onion and grate it with a grater. The same with zucchini, we grate ii with a hand grater. You may not use it, but placing the zucchini makes it even softer. Place the slice of bread to soften in the milk or water.
- In a deep bowl, we add and mix all the ingredients. We add the ground beef, onion, zucchini, garlic, egg, soaked bread, salt, two tablespoons of olive oil, spices, and mix all well.
- In a glass or clay baking casserole where you can also place a baking sheet, we will first add the boiled potatoes, which we marinate with salt, oregano, or rosemary, and a little corn oil so that the potatoes come out crispy on the outside. We use corn oil because it cooks at a higher temperature than olive oil and does not burn.
- Place the prepared meatballs on top and place the pan in the oven preheated to 200 degrees to bake for about 1 hour.
- Serve this dish warm, combined with seasonal salads, like white or red cabbage salads, etc.
