Even though we are entering the winter season, high temperatures and sunny weather make us continue to love and still use our menu full of summer recipes, such as this one that we will share today.
Baked Eggplant Roll-Ups recipe is a delicious vegetarian one, tasty vegetarian side dish, or a yummy aperitif for our family lunches. When we find fresh eggplants, we can not say no to this recipe.
Ingredients
- 2-3 eggplants
- 1-mozzarella cheese-125 g
- basil leaves
- 250-300 ml of tomato sauce
- 50 g of ground Parmesan or Grana cheese
- salt, olive oil

Directions
- First, we cut the sliced eggplants after we have eliminated the tail and grill them or bake them in the grilling program in the oven. We bake eggplant slices in a baking tan with the baking paper without adding anything else.
- While the eggplants are ready, in a pan that you can also use for the oven, we will add the tomato sauce, add salt, pepper, basil leaves, olive oil and let it cook for a few minutes on low heat.
- Let the eggplants cool a bit, and form the rolls by placing mozzarella and basil leaves in the middle and wrap them in rolls.
Place them in the pan or casserole where we have the tomato sauce, lightly coat them with the same sauce, sprinkle them with grated cheese, and bake them in a preheated oven at 200 degrees for 10-15 minutes. - Serve them warm.
