This Baked Cod Fish Recipe is a much tasty codfish and veggies one and can be served to the whole family including small children, taking care not to use pepper and too much salt for them. Cod is a fish with a light taste and does not contain many needles, and for this, we often cook it for children both in soups and in the oven. It gets a different taste cooked with vegetables, and in this way, we educate the whole family to consume a variety of veggies.
Fish is much healthy food for the human body. We should consume fish at least once a week. We recommend that you choose the fish you want and cook it the way you like, and it is significant to make it part of your food menu for the whole family.
In this recipe, we have chosen to cook codfish in the oven-baked with different vegetables, wherein a few minutes we prepare the recipe, and the rest is to the oven that prepares the meal for us. I have used vegetables we find in this season, and you can add or not the vegetables you like most in this recipe.

Ingredients-4 Servings
- 2 big codfishes ore four medium ones
- 2 carrots
- 2-3 potatoes
- 2 zucchinis
- 2 green peppers
- 1 red pepper
- 7-8 cherry tomatoes
- salt, pepper
- olive oil
- fresh parsley
Directions
- First, we clean the fish, wash it, dry it and marinate it with salt, pepper, and olive oil.
- We clean and cut the vegetables into cubes and put them in a large oven pan. Since cod is a quick-cooking fish, I prefer to roast the vegetables for 15-20 minutes before adding the cod to the pan along with them.
- Marinate them with salt, pepper, and olive oil and bake for 15-20 minutes until they get a light golden color in the preheated oven at 200 degrees. We will place the fish on top of the vegetables. We also season it with parsley.
- Bake the codfish and veggies in the preheated oven at 200 degrees for another 30-40 minutes. You can also cover the baking pan so that the fish does not dry out. I choose to bake it in the automatic oven program for fish roasting, as it cooks the fish soft and full of juice.
- Serve the fish with warm oven vegetables with fresh minced parsley on top.
