Cauliflower is one of the vegetables of the season, which we can cook in dozens of ways and prepare tasty recipes. Today we want to bring you a recipe for Baked Cauliflower Meatballs. The cauliflower meatball recipe is simple, delicious, and loved even by children. Oven-baked meatballs will come out crispy on the outside but soft on the inside and can be consumed even by small children. I also combined the recipe today with chicken cooked ham to make it a complete dish for kids, but you could very well remove the bacon or ham and prepare it as a vegetarian recipe. We can serve meatballs with home-made sauces. We will bring you a simple idea of preparing sauces to accompany meatballs.
Ingredients
- 450-500 g cooked cauliflower
- 250 g boiled potatoes
- 150 g chicken baked ham
- 1- egg
- 50 g ground cheese Grana, or Parmigiano
- 50 g of cottage cheese or soft cheese
- 2-3 tbsp breadcrumbs
- 2- tbsp olive oil
- salt, pepper (we recommend not use pepper for young children), fresh parsley
- Breadcrumbs for breading
Directions
- We will clean and rinse the cauliflower, cut it according to the flowers and cook it on steam, or boiled for a few minutes in salted water. In another pot, we will cook the peeled potatoes. If you do not have much time, you can boil them peeled and dice them. After boiling, drain them from the water so that when you mash or grind them, both the cauliflower and the potatoes are dry.
- In a kitchen blender or grater, we will put the chopped bacon, cauliflower and grind them. Mash the potatoes with the puree press.
- In a deep bowl, add the cauliflower and minced bacon, mashed potatoes, egg, cheese, olive oil, salt, finely chopped parsley, and breadcrumbs, and mix well to form a dough for meatballs.
- Preheat the oven to 200 degrees Celsius. Take a flat baking pan and cover it with parchment paper.
- From the meatball dough, we will take the amount of a spoon, and we will give it the shape with our hands and pass them on breadcrumbs. Transfer them to the baking pan, and bake the meatballs at 200 degrees for 25-30 minutes, until they turn reddish.
Let them cool a bit and serve warm. You can serve meatballs with salads that you prefer, but you can also prepare tasty sauces to accompany them.
One of the sauces that I prefer and combines very well with either meat-based meat or vegetable is a yogurt-based sauce.
For the yogurt sauce:
- 150 ml of yogurt ( greek yogurt or natural yogurt)
- 1- garlic clove
- 2 tbsp olive oil
- 1 tbsp lemon juice (facultative, if you like sour sauce)
- salt, pepper
- Herbs as you like (parsley, dill, mint, Curry, Curcuma, Paprica)
Directions
- In a bowl, we will mix well yogurt, salt, pepper, olive oil, crushed or finely chopped garlic, lemon juice, and to this base, we will add the herbs we want according to preference. You can divide it into several bowls, adding parsley and minced dill, or Curcuma, or Curry, or Paprica, etc.
