Easy Homemade Ravioli Ricotta Recipe is a delicious first course, especially when we cook fresh pasta at home. We constantly cook fresh pasta in the family. Ingredients
For Pasta
- 3 eggs
- 300 g flour
- A pinch of salt
For the Filling
- 250 g fresh Ricotta
- 100 g minced Parmesan cheese
- 1 egg yolk
- Salt, pepper
For the condiment sauce
- Olive oil
- Garlic glove
- Tomato puree
- Salt, pepper
- Fresh basil leaves
- Minced Grana cheese

Pasta Dough Preparation
Like the other fresh pasta recipes, also, in this one, the first step is the dough for Ravioli pasta.
- 1. First, we will make the pasta dough by mixing the ingredients with a dough mixer or kneading the dough by hand as we do for the pie.
- Once ready, we knead the dough well until we have a soft, elastic dough and let it rest for 30 minutes.
How to make Ravioli and Ricotta filling
- While we make the pasta dough, we will place the ricotta to drain the excess water in a colander or kitchen strainer.
- Next, when the ricotta has lost excess water and drained completely, transfer it to a deep bowl.
- Then, add the grated cheese and egg yolk and mix the ingredients. Also, add salt and fresh ground black pepper, and the filling for our ravioli is ready.
Preparation of the Ravioli
- The first step is to roll out the puff pastry. Then, with the pasta machine or even pulling with a rolling pin, we roll out the fresh pasta into a thin layer, considering that the pasta layer will fold up and the ravioli pasta shouldn’t be too thick at the end.
- So, I used the pasta roller and rolled out the dough at number 6, but you can also roll it out with a rolling pin. In this case, there is a way to check if the dough layer rolled correctly. So, if you blow the dough layer across the table and the dough lifts off the surface, then the thickness of the dough layer is just right.
- After having rolled out the dough, we continue with the filling.
- We will then put the filling in the middle of the dough layer. We add the filling the size of a walnut away from each other.
- Also, place the filling in an ordered way. So, it keeps the edge, and the ravioli come out neatly when we cut them.
- Next, once we place the filling on the pasta layer, we will fold the pasta over to cover it. We close the sides of the layer tightly and cut the ravioli.
- Finally, we lay the ravioli on a surface dusted with flour and make the sauce to accompany them.
Preparing the Sauce and Cooking the Ravioli
- In a pan, we will add olive oil and a clove of garlic and put it to heat so that the oil starts to aromatize.
- Next, as soon as the garlic has released its aroma, remove it and add the tomato puree.
- Let it cook for a few minutes on low heat, season it with salt and pepper and add fresh basil chopped by hand.
- In the meantime, add the fresh ravioli to a pot of boiling water and salt, and cook them for 4-5 minutes until they rise to the surface of the salty water.
- Drain the cooked ravioli and add to the sauce. Mix it carefully and serve Ravioli and Ricotta immediately. I prefer to serve it on a large plate in the middle of the table. Add the grated cheese on top and basil leaves.
