Mediterranean Chicken Breast is a quick and tasty second course for a lunch or dinner meal. The recipe cooks in the pan, and the chicken turns out soft, in its juice, properly flavored.
The combination of tomato with olives and capers brings an explosion of Mediterranean aromas and flavors, wherefore the dish gets this name.
Chicken fillet does not require much cooking time, so this recipe is not only delicious, but in a few minutes, you can satisfy your friends and family even when you do not have time or could not cook something else.

Ingredients
- 500 g chicken breast
- 3-4 medium tomatoes
- a handful of desalted capers
- 150 g mixed olives, or black or green only
- ½ glass of white wine
- 2 poached garlic cloves
- a sprig of rosemary, oregano, basil leaves
- salt, pepper, olive oil
- 1-2 tbsp of flour
Directions
- To begin, we will cut the chicken breast into thin slices and beat them with a kitchen hammer.
- Roll the fillets in flour on both sides.
- In a pan, add olive oil, and we will fry the chicken fillets on both sides. Add the poached garlic cloves (without peeling the skin) and the rosemary spring.
- Add salt and pepper. We will extinguish the chicken with half of the wine, and meanwhile, we also add the seedless tomato cut into pieces. We enjoy it with salt and pepper.
- Add the olives, capers, and the rest of the wine.
- Once the alcoholic part has evaporated, add a little oregano and basil leaves, and cook for a few minutes with the lid covered on low heat. It will result in a very soft fillet on the inside, crunchy in its juice on the outside.
- Accompany it with its juice and sauce created from tomatoes and olives.
- Serve the chicken fillet warm.
