Berries Cake Recipe

This Berries Cake Recipe is a dessert that you can easily prepare and delight your family and friends for weekends or even on various holidays.

I prepared this birthday cake, but you can serve it for any occasion.
The fruits of the forest give it a taste of freshness and are considered an easy dessert to eat even during the summer season.
In this period of the year, we find fresh forest fruit, but the frozen packages make it easy for us to cook this cake in any season.

How we make it?

A mixed package of forest fruits (blueberries, blackberries, raspberries, ribs) is the first thing we need for this recipe. I preferred to add some more cherries. For more details, please keep reading the recipe.
As for the sponge cake, I have chosen to bake it in a 20 cm of diameter baking cake pan. If you want a lower and smaller cake, halve the ingredients.

Also, for a square or rectangular version of this cake, you can bake the sponge cake in the oven pan and cut it into four equal parts to then assemble it in the same way as below.

For the sponge cake
  •  4 eggs
  • 150 g  of sugar
  • 150 g of flour
  • a little salt
  • Lemon zest or vanilla extract
For the cake cream and filling
  • 500 g  whipping cream
  • 250 g of Mascarpone
  • 300 g of fresh mixed berries, forest fruit (keep some of them apart for decor)
  • 100 g of cherry
  • 1/2 Lemon juice
  • 2-3 tbsp of sugar
  • vanilla extract

Directions

Sponge Cake

  1. We will prepare the sponge cake first. You can find the recipe for sponge cake here.
  2. Preheat the oven to 180 degrees.
  3. In a deep glass bowl, add the eggs at room temperature, a little salt, sugar. Beat all for about 10 minutes until they significantly increase the volume.
  4. Add the vanilla flavor or lemon zest and sifted flour, mixing lightly from the bottom up until it becomes a homogeneous dough without grains.
  5. We throw the sponge cake dough in the baking pan lined with baking paper. Place it in a preheated oven at 180 degrees for 25-30 minutes.
  6. Remove the sponge cake and let it cool by passing it from the pan to a plate.
  7. When the sponge cake cools, cut it into equal parts. Cut as desired into two, three, or four pieces. Of course, the fewer parts, the thicker the sponge part will be. It depends on your tastes.

Forest fruits

  1. Meanwhile, we will place the forest fruit and cleaned cherries from the kernels in a saucepan covered with lemon juice and sugar. It is good to let them marinate for 20-30 minutes to release the liquid before cooking.
  2. Let them boil for a few minutes until we see that the fruits released quite a bit of juice.
  3. Drain them with a colander and keep the fruits aside.
  4. We will dilute the liquid by adding up to a glass of water as we will use it to soften the sponge cake. Use a part of the juice to the cream that we will prepare for taste, aroma, and color.

Filling cake cream

  1. In a bowl, beat the whipping cream until it makes a firm cream.
  2. Separately, beat the Mascarpone cream by adding pieces of forest fruit juice to taste the cream and give a hint of forest fruits.
  3. We will also add the beaten cream. You can add juice again if you want.

Assembling the Cake

  1. On a plate, place the first layer of sponge cake and soften it with berries juice. We add cream, open it uniformly and toss some of the forest fruits.
  2. We repeat this procedure for how many parts we have divided the sponge cake, calculating that we should use the forest fruits in the inner of the cake, as we keep some fresh and raw for decoration.Berries Cake Recipe-Family Cooking Recipes
  3. After assembly, all sponge cake layers continue by spreading the cake cream covering the cake well on the outside.
  4. Throw the rest of the cream in a pastry bag and decorate the cake as you like.
  5. If you want more color in your decor, you can divide the cream into pieces and add a dot from the selected colorant. Mix it well, we throw the cream in the bag and decorate our cake.
  6. Place the cake in the fridge to keep it fresh before serving.
