This Easy Potato Croquettes recipe is a tasty and delicious appetizer or side dish, which likes to all in the family. It is a yummy combination of mashed potatoes, ground cheese, and eggs. The recipe can prepare in a few minutes. We use corn oil to fry them.
We can cook them simply with a few ingredients. It is a quick and easy recipe to enjoy with good friends. It is a delicious appetizer and banquet food.

Ingredients
For croquettes dough
- 1 kg of potatoes
- 1-egg
- 100 gram of ground Parmigiano cheese
- salt, black pepper
For breading
- 100 g of bread crumbs
- 2-eggs
Corn oil for frying
Directions
- Wash the potatoes and place them in a pot of cold water. Add a little more salt.
- Boil the potatoes all over the skin for 35 minutes.
- We will let them cool a bit, clean them from the skin and press them with a potato masher.
- We add salt, pepper, ground Parmesan cheese or other minced cheese, one egg.
- Mix them well, and shape the potato croquette dough in a cylindrical shape.
- Beat the eggs well and add a little salt.
We pass the potato croquettes first in the egg mixture, then in the bread crumbs. We repeat this process twice for a very crispy result. - We will fry them in a deep pan with a lot of oil. They will cook in a few minutes until to get a nice reddish color.
- We transfer our fried croquettes to kitchen paper to drain the remaining oil.
- We serve them warm.
