About Polenta

Polenta prepares from yellow maize cereal. It is a kind of food eaten and used since Roman time. Before yellow corn arrived in Europe, various cereals such as wheat, buckwheat, chestnut flour were some of the ingredients for cooking polenta. Time ago, Polenta knows as a poor dish, but our days, we use it extensively by cooking it as an accompaniment to our meat and vegetable recipes, or by combining it with other flours like corn, buckwheat, etc., and use it in various Albanian burek, pies, Pispili recipes.

In the various countries of Europe, we can find a traditional polenta recipe, but in a different name from the traditional cuisine of each European country.

Harapashi is one of our best Albanian recipes with cornflour, similar to polenta. It is a tasty combination of cornflour, butter, and lamb intestine, one of the best Polenta recipes to enjoy. Another polenta recipe in our country is Kaçamaku. It cooks with cornflour, crushed white cheese, and mashed potatoes, and it is a Turkish cuisine heritage recipe. We will share these two recipes at another time, and today, we want to share Polenta with Wild Boar.

How to Cook Polenta

The secret of cooking a taste polenta is to boil it slowly and mix it in the same direction continuously.

  1. We will add water to a pot and bring it to a boil.
  2. We will add salt, and when the water starts to boil, without reaching a full boil, we will add the polenta in the form of rain, stirring it in the same direction with a wooden spoon. The polenta becomes one with the water and does not granulate like that.Wild Boar With Polenta Recipe-Family Cooking Recipes
  3. We will cook it on low heat. We need to mix it continuously with a wooden spoon. We will continue like this for 40-50 minutes until the cooked polenta detaches from the pot’s walls.Wild Boar With Polenta Recipe-Family Cooking RecipesWild Boar With Polenta Recipe-Family Cooking Recipes
  4. We take the polenta and pour it on a wooden kitchen board, opening it evenly. Let it thicken a little and cut it into small pieces, accompanying it with wild pork.

Another way to cook polenta is to bake it in the oven if you do not have much time and do not want to stay on top of the pot stirring for a long time.

  1. In this case, we will grind the polenta in boiling salty water, mixing it well, as it did for cooking in the pot.
  2. We will transfer it to a greased baking pan, and we will bake it in the preheated oven at 220 degrees for about an hour.
  3. Take it out of the oven, place it on a wooden plate and serve it warm.Wild Boar With Polenta Recipe-Family Cooking Recipes

  1. We will wash the wild boar well from its blood. For this, I put it in water for a few hours, changing the water and rinsing in running water from time to time.
  2. We will dry it and cut it into pieces. We add salt and pepper and transfer to a bowl.
  3. We will peel and finely chop the onion, cerely, and carrot. Add them to the meat, add spices, olive oil, and wine. Cover it and let rest it in the fridge overnight.
  4. You can choose to cook it in a pressure cooker for 20-30 minutes, or in a slow cooker for an hour. The meat will come out in a stew version. We serve it with cooked polenta and its juice sauce.
