Sweet potato is one of the vegetables that widely cook all year in various recipes for the whole family, including soups for young babies. Today, we want to share with you a Creamy Sweet Potato Soup Recipe.
You can cook and serve it as a first course for your dinner or lunch. You can also take it with you to work. The recipe is simple to prepare, and the combination of ginger and lemon makes it delicious and much tasty, even for those who didn’t like sweet tastes.
About Sweet Potato
Sweet Potato is a vegetable of the Dicots family, a root rich in starch and a sweet taste. The root is the primary part that we cook and eat, and there is also the portion of the young leaves which can eat as a green.
Sweet potato originates from South and Central America, dating back 5,000 years ago, and from there, it used to spread and cultivated around the world. It is a plant that requires sun and warm temperatures to grow up and does not tolerate cold. In terms of nutritional values, except starch, sweet potato is rich in complex carbohydrates, dietary fiber, and Beta carotene. Also, it contains Vitamin B5, B6, and Manganese. We profit an increase in vitamin C values to 24% of the daily value for every 100 grams of baked sweet potatoes.

Ingredients
- 500 g sweet potatoes
- 3 garlic cloves
- 1 onion
- 2 tbsp fresh ground ginger
- 1 lemon or lime
- fresh parsley
- salt, pepper
- a little chilly pepper
- olive oil
- 100 ml of cream
Directions
- Chop the onion thinly and cook it in a pot of olive oil. Once the onion slightly tender, add the minced garlic and minced ginger.
- Mix and add the potatoes peeled and cut into pieces. Add a little salt and pepper and a little dried chili pepper.
- We will stir them all together for 3-4 minutes and add warm water or vegetable juice.
- Let it simmer for 10-15 minutes and pass it with a mixer until it becomes creamy.
- Add the cream at the end and add lime juice or lemon juice and a little minced green lemon zest.
- Serve the warm soup and season it with fresh parsley on top.
