Radish is one of the most popular vegetables that we all use in salads, soups, and tasty appetizers. Today we want to share a recipe for Red Radish Soup Recipe, a much delicious first course.
Radish is rich in water, in 95% of them, 3% carbohydrates, 1% protein, and very low fats. We like to consume them raw and also cooked are much tasty. Today’s soup is a quick and easy recipe and like by the whole family. Radish contains vitamin C, although in more moderate values than other seasonal vegetables, as well as Folate and Vitamin B6. Radish is all consumed, including leaves and seeds.

Ingredients
- 500 g red radish with leaves
- 1-potato
- ½ leek (the white part)
- ½ onion
- vegetable or meat stock
- 3-4 tbsp Parmigiano cheese
- salt, pepper, olive oil, fresh mint, or parsley
Directions
- We chop the onion and leek finely and stir-fry them with a little olive oil in a deep frying pan or non-stick pan. Let them soften with the lid covered for a few minutes.
- Meanwhile, we will clean the turnips by washing them well from the soil, and we will cut their extremities, the part of the roots, and the part where the leaf connects and cut them in half. We will wash the leaves well and set them aside.
- We will also wash the potatoes, peel them, and cut them into medium cubes.
- Once the leeks and onions tender, add the turnips and potatoes and cook, adding a little salt for a few minutes.
Add water, vegetable juice, or meat juice as desired and simmer for about 10-15 minutes. When the time passes, we will add the leaves and boil them together for another 10 minutes. - We blend it in a kitchen mixer or blender and arrange it with another stock or water if it turns out too thick. We will also season it with salt, pepper, two tablespoons of Parmigiano cheese, and olive oil.
- Garnish it with fresh mint or parsley and grated Parmigiano cheese and serve it warm.
