Russian salad is one of the salads and appetizers that always accompanies us at festive lunches or dinners, a perfect combination of mayonnaise with various vegetables and flavored with fresh parsley. Ingredients
- 100 g dried white beans
- 100 g of peas
- 1- potato
- 1-carrot
- 300 g mayonnaise
- 2-3 small pickled cucumber and pickled peppers if you prefer
- Salt, Pepper, fresh parsley
Directions
- We start with the beans, which we soaked them in cold water for a few hours, and after that, we simmer the beans until softened. We cook for a few minutes and pour this water and make them cook with hot water, not interrupt the cooking process.
- It will take about an hour of simmering, but you have to check by yourself because various types of beans cook at different times.
- During this time, we prepare other vegetables for our salad. So, we peel and dice potato, carrot, and cook all vegetables in hot salty water for some minutes, separately. Vegetables should become soft but retain their shape.
- Let all the vegetables and beans cool completely. Add a little salt to the beans as we have boiled them in water without salt, as salt slows down their cooking. We also cut pickles into cubes.
Arrange the salad by mixing all the ingredients in a large bowl. Toss a piece of mayonnaise and minced parsley. - Mix well and add the rest of the mayonnaise. Serve and accompany with toast. This salad can also be consumed by children.
