Lentil is a plant part of the legume family, and we can find it in different variations and colors, like brown, red, green. As food, lentils are known and use all around the world. In our soup recipe will use brown lentil and combining with the other ingredients we realize a tasty and healthy plate of everyone.
Ingredients – four Servings
420 g/14 1/2 oz brown lentils
50 g / 1.8 oz small pasta that we use for soup
4-rashers streaky bacon, or one sausage
1-onion, finely chopped
2-garlic cloves, crushed
2-sticks cerely
1.2 liters hot ham or vegetable stock.
2-tbsp chopped fresh mint
Directions
You can choose to use can brown lentils, drained, or dried lentils, as I prefer. In this case, take a casserole and cover the lentils with cold water and let them boil for 5- 10 minutes (depends on the variety of lentils because there are small lentils that cook in ten minutes and some other in 40 minutes). Drained the lentils from the water and let apart.
In a large frying pan, add bacon or sausage, cut in small squares or cubes, and together with onion, cerely, and garlic, fry for 4-5 minutes, stirring until the onion tender and the bacon start to brown, cooking in medium heat. If you prefer, you can add 1-tbsp olive oil, but the bacon’s fat is enough to fry the mixture.
Add the pasta that you prefer for this soup and cook stirring for about one minute to cook the pasta together with the mixture.
Add the lentils and the stock and bring to the boil. Reduce the heat and let to simmer for 12-15 minutes until the pasta is tender.
Remove the pan from the heat and garnish and stir in chopped fresh mint. Transfer soup in a warm soup bowls and serve immediately.
Conservation
This soup must consume warm, and for better taste, you better consume at the same meal that you cook.
