Being a mother makes me thinking and exploring new recipes for feeding healthily and using varieties of ingredients to my little one nutrition. One of the best techniques for learning young babies to eat veggies and meats is cooking the meatballs. My little one likes meatballs, so I try to cook for her meatballs in various recipes.
As you may know by our other recipes, zucchini is one of the vegetables that don’t have fats, and for this, it combines perfectly with different meats, fishes, and seafood. In this recipe, we will combine zucchini with ground beef, but you can use the same recipe replacing beef with chicken or fish. We can choose to cook the meatball dough in small size to serve even for banquets or events, normal ones, or big ones, to prepare delicious hamburger for our kids.

Ingredients
- 2-3 zucchinis
- 400-500 g ground beef
- 1-egg
- 1-small onion
- 1-2 garlic cloves(facultative)
- 100 g bread crumbs and other for the outside part of the meatballs
- 100 g ground Parmigiano cheese
- salt, pepper, olive oil, fresh parsley, fresh mint

Directions
- First, we will grate the zucchinis with a grater and put them in a colander to dry them from their liquid.
- In the same way, we will grate the onion and chop the garlic cloves finely.
- In a deep bowl, we add ground beef, grated zucchinis, onion, garlic, Parmigiano cheese, egg, salt, pepper, 2-3 tbsp olive oil, and will mix all of them. Add the bread crumbs and fresh herbs and mix until to make the meatballs dought. You can use more or fewer bread crumbs based on the humidity of the mixture of the ingredients. You can prepare one day before and keep in the refrigerator to cook the meatballs before your mealtime.
- Preheat the oven at 200 degrees. We will bake the meatballs, but if you prefer, you can cook them fried in a pan. We will prepare a baking pan to bake the meatballs, cover it with a baking paper.
- We will add other bread crumbs on an open plate, and we will start to make meatballs using our hand palms, passing in the bread crumbs, and transfer each of them in the baking pan.
- Transfer the pan in the preheated oven to bake for 25-30 minutes.
- Let them cool and transfer in a serving dish to serve them warm. They are also tasty even when we eat them cooled.
